Pasta Night

I’ve been thinking.

It is time to simplify meal prep in my household.

Too often I get home and am too tired to come up with a plan for dinner.

When that happens, it’s really easy to just go out and eat. It’s a dangerous, expensive trap.

So, I introduce to you, Pasta Night.

I have decided that at least one night a week we will eat pasta.

It’s inexpensive and pretty easy to prepare.

Plus, there are tons of options if you are feeling adventurous.

Last night I threw a meal together that was pretty tasty.

First, I sautéed zucchini, mushrooms and a red bell pepper in a little olive oil. Then I added about half a jar of leftover pasta sauce and some water and let that summer.

After the sauce was ready, I tossed it with about half a box of vegetable penne that I cooked in a separate pot.

I topped it with mozzarella and parmesan and threw it in the oven for a few minutes to melt the cheese.

I was quite pleased with the outcome, and I think the family was too.

So, I’m declaring our first official Pasta Night a success.

Now I need to figure out what we will eat the rest of the week. Hmm…
